Yogurt Berry Trifle

INGREDIENTS: 

1 serving of strawberries, raspberries, or blueberries

1 cup plain Greek yogurt

1 pkt Stevia

1 tsp lemon juice

pinch of lemon zest

1 rice cake

Instructions:

  • Choose one type of berry and slice it.
  • Combine the berries, stevia, lemon juice, and zest until well coated.
  • Crumble the rice cake into small pieces.
  • Alternate layers of the yogurt mixture and the rice cake in a small bowl.
  • Finish with a topping of berries and enjoy!

    Shrimp & Asparagus

    INGREDIENTS:

    1/2C. Cooked Asparagus

    1/4C. Diced Green Onions

    1Tbs. Diced Green Pepper Flakes

    1/4C. Diced Celery

    1Tbs. Lemon Juice

    1/2 Small tomato

    1/4Tsp. Thyme

    MLS/Pepper to taste

    5Oz. Shrimp

    DIRECTIONS: 

    Spray a pan with Pam and sauté chopped onions, celery, and soaked green pepper flakes until they become limp. Next, add lemon juice, diced tomatoes, and your choice of seasonings, and let the mixture simmer for 10 minutes. Afterward, add the shrimp and cook for an additional 5 minutes. Serve this mixture over cooked asparagus.

     

    Cottage Cheese Crust

    Ingredients:

    • 4oz. Non-Fat or 1% Fat Cottage Cheese
    • 1 Egg

    DIRECTIONS: 

    Preheat oven to 350

    In a bowl, add the cottage cheese and 1 egg. At this point, you may add any seasonings to suit your flavor profile!

    Mix together all ingredients. Once mixed, pour the contents onto a baking sheet lined with parchment paper. You may use a rubber spatula to spread the mixture evenly in a circle or square.

    Place in the oven for 35-45 minutes.

    Remember, this counts as one protein and is a red box. Be creative with your veggies: Make a tomato, basil, or spinach sauce for dipping or a fun veggie wrap!

    Cucumber Vegetable Dip

    Cucumber Vegetable Dip

    Ingredients

    • 5oz. 1% low fat cottege cheese
    • 1/2 Medium cucumber
    • 5 Medium Radishes
    • 5 Small green onions
    • 1tbs. Lemon juice
    • 1tsp. Dill
    • Pepper and MLS to taste
    • Rice cake

    Instructions:

    Combine all ingredients. 

    Blend until smooth. Cover and chill for 30 mins.

    Serve with rice cake or veggies.

     

     

    Southwest Salmon Quinoa Bowl

    Southwest Salmon Quinoa Bowl

    Ingredients

    • 4oz. Grilled Salmon
    • 1/4C. Cooked Quinoa
    • 1 Small Wedged Tomato
    • 1c. Arugula
    • Ms. Dash Southwest Chipotle Seasoning
    • 1Tbs. Skinny Girl Southwest Chipotle Dressing.

    Instructions:

    Season your salmon with MLS and Ms. Dash seasoning then grill until cooked. In a bowl add your cooked quinoa, wedged tomatoes and arugula. Top of with your skinny girl dressing and enjoy!

     

     

     

    Heart Healthy Tuna Salad

    Ingredients

    5oz. Fresh Tuna

    1 Stalk Celery (chopped)

    1/8C. Green Onions (chopped)

    1 Slice Diet Bread (toasted)

    MLS 1 TBS. Light Mayo

    Instructions:

    Prepare your fresh tuna by cooking it in the air fryer @400 for 5-6 Minutes. Once the tuna is done, combine chopped celery, green onions, MLS, and light mayo in a bowl. Then toast your diet bread, and once ready, scoop the mixture onto the toast.

     

     

     

    Caribbean Chicken with Spiced Tomato

    Ingredients:

    6oz. Chicken breast

    2 Whole Peppercorns

    1 Sm. Clove Garlic

    1/2 Tsp. Morton’s Light Salt

    1/2 Tsp. Lemon Juice

    2 Tomatoes, halved

    2 Slices Diet Bread (crumbled)

    Directions:

    Crush and mix seasonings. Rub chicken with mixture, cover, and refrigerate for 4-6 hours. When ready, preheat the oven to 400 degrees and bake the chicken uncovered until cooked thoroughly. Meanwhile, salt and pepper tomatoes and brush with vinegar; add bread crumbs and broil for 3-5 minutes.

    Serve and enjoy!

    Chicken Tacos

    Ingredients: 

    • 3.5 ounces chicken breast
    • 1 tsp onion powder
    • 1 clove fresh garlic, minced
    • ⅛ tsp oregano
    • ¼ tsp cayenne pepper
    • ⅛ tsp ground cumin
    • 4 large lettuce leaves
    • ½ lemon
    • 2 tbsp fresh cilantro, chopped

    Directions:

    • Cut any visible fat off the raw chicken breast.
    • Place a pot of water on the stove to boil.
    • Add salt, if desired.
    • Once boiling, add the raw chicken meat. Turn the temperature down to low, cover, and allow to cook for 3-5 minutes.
    • After the chicken is cooked, set aside to cool.
    • Wash and dry the lettuce.
    • Lay the lettuce leaves out on a plate and set aside
    • Once the chicken has cooled, shred the chicken
    • Place the shredded chicken on a small, non-stick pan on low-medium heat.
    • Add the above spices: onion powder, minced garlic, oregano, cayenne pepper, and cumin. Stir well.
    • Continue to heat until the mixture is warm. Since the chicken is already cooked it shouldn’t take more than 3-5 minutes. If you’re having an issue with the meat sticking to the bottom of the pan, add a tablespoon or so of water.
    • Remove from heat.
    • Place the chicken mixture in the center of the lettuce leaves.
    • Sprinkle the fresh cilantro on top of the tacos.
    • Squeeze fresh lemon juice over the top of the tacos.
    • Eat with your hands like tacos, and enjoy!

    Fruit Shortcake

    Ingredients: 

    • 5oz. 1% Cottage Cheese
    • 1 Serving of fruit (Peaches, Blueberries, or Strawberries)
    • 1 Rice Cake
    • 2Tbs. skim milk
    • 1 pkt. Stevia
    • Cinnamon

    Cream cottage cheese in a blender adding 1/2 stevia packet and a few drops of skim milk, Mix fruit with the other half of stevia packet. Heat rice cake with a little cinnamon in the oven until warm. Take your prettiest dessert dish and assemble rice cake, and fruit, and top with cream cheese.

    Strawberry Sherbet

    Ingredients:

    • 12 small frozen strawberries
    • small amount of clear diet soda

    Directions:

    Add 12 small strawberries to a blender with a small amount of clear diet soda.

    Blend together until smooth, Add to a custard cup and enjoy!
