Caribbean Chicken with Spiced Tomato

Ingredients:

6oz. Chicken breast

2 Whole Peppercorns

1 Sm. Clove Garlic

1/2 Tsp. Morton’s Light Salt

1/2 Tsp. Lemon Juice

2 Tomatoes, halved

2 Slices Diet Bread (crumbled)

Directions:

Crush and mix seasonings. Rub chicken with mixture, cover, and refrigerate for 4-6 hours. When ready, preheat the oven to 400 degrees and bake the chicken uncovered until cooked thoroughly. Meanwhile, salt and pepper tomatoes and brush with vinegar; add bread crumbs and broil for 3-5 minutes.

Serve and enjoy!

Chicken Tacos

Ingredients: 

  • 3.5 ounces chicken breast
  • 1 tsp onion powder
  • 1 clove fresh garlic, minced
  • ⅛ tsp oregano
  • ¼ tsp cayenne pepper
  • ⅛ tsp ground cumin
  • 4 large lettuce leaves
  • ½ lemon
  • 2 tbsp fresh cilantro, chopped

Directions:

  • Cut any visible fat off the raw chicken breast.
  • Place a pot of water on the stove to boil.
  • Add salt, if desired.
  • Once boiling, add the raw chicken meat. Turn the temperature down to low, cover, and allow to cook for 3-5 minutes.
  • After the chicken is cooked, set aside to cool.
  • Wash and dry the lettuce.
  • Lay the lettuce leaves out on a plate and set aside
  • Once the chicken has cooled, shred the chicken
  • Place the shredded chicken on a small, non-stick pan on low-medium heat.
  • Add the above spices: onion powder, minced garlic, oregano, cayenne pepper, and cumin. Stir well.
  • Continue to heat until the mixture is warm. Since the chicken is already cooked it shouldn’t take more than 3-5 minutes. If you’re having an issue with the meat sticking to the bottom of the pan, add a tablespoon or so of water.
  • Remove from heat.
  • Place the chicken mixture in the center of the lettuce leaves.
  • Sprinkle the fresh cilantro on top of the tacos.
  • Squeeze fresh lemon juice over the top of the tacos.
  • Eat with your hands like tacos, and enjoy!

Fruit Shortcake

Ingredients: 

  • 5oz. 1% Cottage Cheese
  • 1 Serving of fruit (Peaches, Blueberries, or Strawberries)
  • 1 Rice Cake
  • 2Tbs. skim milk
  • 1 pkt. Stevia
  • Cinnamon

Cream cottage cheese in a blender adding 1/2 stevia packet and a few drops of skim milk, Mix fruit with the other half of stevia packet. Heat rice cake with a little cinnamon in the oven until warm. Take your prettiest dessert dish and assemble rice cake, and fruit, and top with cream cheese.

Strawberry Sherbet

Ingredients:

  • 12 small frozen strawberries
  • small amount of clear diet soda

Directions:

Add 12 small strawberries to a blender with a small amount of clear diet soda.

Blend together until smooth, Add to a custard cup and enjoy!
